A Nagasaki-style ramen supervised by ramen specialist Ichiro Yamato from Yakan-tei, featuring the region’s famous flying fish broth (ago dashi).

This ramen uses non-fried thin noodles produced by Torishi Shoten (Ukiha, Fukuoka) paired with a soy sauce soup base developed with Matsubara Shokuhin (Fukuoka). The soup combines niboshi (dried sardine) extract, bonito extract, and roasted flying fish, creating a deep umami-rich flavor unique to Nagasaki.
