This concentrated tsuyu sauce is made with a blend of four types of dried fish flakes—bonito, sōda bonito, sardine, and tuna—along with true kelp dashi. The soy sauce is enhanced with a matured mixture called "kaeshi," which includes added sugar, resulting in a rich umami flavor.
