This double-broth white dashi combines the refined umami of clams and the rich depth of scallops. It uses domestically produced light soy sauce made from whole soybeans and a unique rice fermented seasoning to suppress the fishy smell of shellfish, enhancing the delicate shellfish flavor. Perfect for classic white dashi dishes like dashimaki tamago, clear soups, and udon, as well as egg soup, pasta, yakisoba, ramen, and stir-fries.
