Description

This limited-edition autumn tea is a special seasonal release from SAIJOEN. Using fresh tea harvested in May, the leaves are carefully stored at optimal temperature and humidity, following the traditional method of “Ocha Tsubo Dochu” from the Edo period, where tea was released from storage in the fall. The tea undergoes a slow aging process, similar to vintage wine or whiskey, which removes the raw, grassy notes of fresh tea, resulting in a mellow, rich flavor with deep umami.

How to Brew

1. Use about 2g of tea leaves per cup.

2. Pour hot water (70-80°C) over the leaves and steep for 30-60 seconds to enjoy the full depth of flavor.

For cold brewing: Steep the leaves in cold water for about 5 minutes.

Storage: Store in a cool, dry place away from direct sunlight and moisture.
